How to: Keep Berries Fresh for a Week

Berries are my superfruits. They are delicious, nutritious with tons of vitamins and fiber, and they are incredibly convenient. But have you ever noticed how quickly berries tend to spoil when they are fresh? This is extremely frustrating to the new Whole 30er and to anyone who values their money.  I have modified the directions from the link above. My general rule of thumb is 1/4 cup of vinegar per 6 oz of berries.

Materials:
  • Salad spinner
  • Paper towel lined cookie sheet
  • 1/2 cup of vinegar
  • Your favorite berries (I am using 2 containers of red raspberries today)
  • Water 



Directions:


Place your berries in the salad spinner. This is what two 6 oz. containers of organic raspberries look like.




Pour the 1/2 cup of vinegar over the berries and into the spinner.




Cover the berries with cool water. Spin for 30 seconds.




Drain solution and spin berries again for 30 seconds.




Drain any remaining water after spinning the second time. Place berries on cookie sheet with paper towels.




Place more paper towels over berries to help absorb water. Leave out to dry completely which is usually about 4 hours. 


Place in a sealed container once the berries are completely dry and enjoy for up to a week.
